Cauliflower brownies

Sounds kinda weird, doesn’t it? But I already made cauliflower ice-cream  (will post a recipe later on!) so why not a cake? 😉

My husband is a big fan of brownies so that’s why I tried to make more healthy version of them

I add kiwis on top because I like more fresh and fruity cakes 😉 I think they would be even better with coconut cream on top but I just wanted to eat them already so didn’t had a chance to make a cream haha

Ingredients:

  • 3 cups of cauliflower rice
  • 1 egg
  • 1 cup of buckwheat flour
  • 1 tablespoon of baking soda
  • 3 tablespoon of coconut sugar
  • 1 tablespoon of cinnamon
  • 5 tablespoon of cocoa powder

Directions:

  • Cook or steam the cauliflower rice until they are soft.
  • Preheat oven to 355 F (180C)
  • In mixing bowl beat eggs with dash of salt and add rinsed cauliflower, mix well until the cauliflower is like a puree and they form something that looks like egg whites.(See picture below)

  • In another bowl stiff all the dry ingredients (flour, cinnamon, cocoa powder, sugar, baking soda)
  • Add dry ingredients to the wet gradually and mix well
  • Bake around 35 minutes
