Sponge cake


  • 5 eggs
  • 1/2 cup of coconut sugar
  • 1 1/2 cup of almond flour
  • 1/2 tablespoon of baking soda
  • pinch of salt



  • Preheat oven to 350F (175 C)
  • Separate the egg yolks and egg whites
  • In a large bowl add egg yolks and sugar and mix together
  • In different bowl whip egg whites with 1/4 tablespoon of baking soda until stiff
  • Add almond flour, rest of the baking soda (1/4 tablespoon) to the egg yolk-sugar mixture and mix well
  • Little at a time keep adding whipped egg whites and carefully mixing together
  • Pour the batter into greased 8 inch pan and bake for 25-30 minutes until golden brown or toothpick comes out clean


Serving Suggestion:


For a Valentines Day I layered the sponge cake with coconut-lemon cream (made from canned coconut cream and coconut flakes) and fresh strawberries. I know it’s not perfect but it was my first time doing a layered cake 😀
