Blueberry Breakfast Quinoa

Blueberry breakfast quinoa 😋💗

 

Ingredients:

  • 1/3 cup of quinoa
  • 1/3 cup of water
  • 1/3 cup of coconut milk from can
  • 1 cup of blueberries
  • pinch of salt
  • cinnamon
  • ground nutmeg
  • coconut sugar
  • walnuts

Directions:

  • Place quinoa, milk, water in a saucepan, add pinch of salt, nutmeg, cinnamon, stir.
  • Bring it to boil.
  • When the water is boiling reduce heat to low and simmer until water and milk has been absorbed.
  • In the bowl add the blueberries, coat with 1/2 of quinoa, coat lightly with sugar. Add blueberries again and then rest of the quinoa and coat with sugar again. Add crushed walnuts on top
